Quinoa Cookies (from “Must Have Been Something I Ate”, by Peggy Kotsopolous
Instructions:
Preheat oven to 380 degrees.
In a large bowl mash bananas with a fork.
Add vanilla, quinoa, coconut, oats or quinoa flakes, maca, sugar and salt and mix until well combined.
Stir in chocolate chips and let sit a few minutes so mixture firms up a bit.
Line baking sheet with parchment paper and drop mixture onto baking sheet in heaping tablespoons.
Bake for about 25-30 minutes until cookie holds together.
Remove from oven, cool on baking rack.
Alternative option:
Replace chocolate chips with ¼ cup cocoa powder and swap out the vanilla for almond extract.
